A means of protecting food products and extending the products’ shelf life. Extending the shelf life of a food makes more food available to consumers by reducing wasted food products and enabling an increased geographic distribution of the food. This then increases the possible sales and number of people able to consume the food product. The other benefits of improved food protection are reduction in foodborne illnesses, increased variety of foods throughout the year, better nutrition for more people, and, ultimately, a reduction in world hunger.
